Farmers Market Tomatoes
Hello again my dear friends!
It's August and it's sooo hot here in Texas, but not too hot that I would ever miss out on my Saturday trip to farmers market, tomatoes are at their ripest, so it is time to make a batch of fresh tomato sauce. At your local farmers market, look for the cracked, slightly bruised tomatoes sold at a discount. The flesh of the tomato should be dense, sweet and blood red. This makes a very fresh-and bright-tasting sauce in a manageable small batch. Take advantage of good tasty tomatoes and fill a few zip-top bags for the freezer.
5 pounds tomatoes
1/4 cup olive oil
1 onion, finely chopped
1 bay leaf
1 teaspoon chopped fresh oregano ( or 1/2 teaspoon dried
2 cloves garlic, coarsely chopped
2 teaspoons coarse salt, plus more as needed
2 tablespoons tomato paste
Wash the tomatoes and place them in a large bowl, cover the tomatoes with boiling water and let them sit for approximately 10 minutes ( it should be easy to remove the skin, but be careful it's hot) Hold the tomato with a fork in one hand and knife in the other to remove the skin. Be sure to squeeze out excess water and remove the seeds and any white flesh, cut the cleaned tomatoes with a fork and then simmer on low medium until thickened. Heat olive oil in sauce, add chopped onion- garlic, saute then rest of ingredients and tomatoes.
